How to get your kids to eat their veggies

If you are like most moms, at some point you have been faced with the problem of your child not liking or wanting to eat vegetables.

My son goes through stages. At one point, he loved broccoli. He would eat an entire plate of steamed broccoli for dinner. Now he won’t touch it. His new thing is tomatoes, which he hated a few weeks ago. Instead of arguing with him about this, I just keep offering different vegetables and he can choose whether or not he wants to eat them. However, I don’t want him to go without eating any , so I have to disguise them. One of the ways I do this is by making a vegetable quiche.

BROCCOLI QUICHE

Ingredients:
Prepared Pie Crust
4 eggs, beaten
2 Tablespoons finely chopped onions
1/2 teaspoon thyme leaves
3 ounces shredded cheddar cheese
1 cup half & half or milk
1/2 cup fresh broccoli or frozen broccoli
3 ounces shredded Monterey Jack cheese
4 tomatoes, medium, sliced

Preheat oven to 350 degrees.

Combine eggs, half & half, onion, salt, and thyme. Set aside. Layer broccoli and cheeses in pie crust-lined pan. Pour egg mixture over broccoli and cheese. Bake for 40 to 50 minutes. Place sliced tomatoes on top and broil one minute.

You can, of course, substitute any vegetable you want in there and put as many spices as you like to taste. I normally use either spinach or broccoli and garlic, oregano, and basil.

Another thing I do is hide the veggies in tomato sauce. I throw broccoli, carrots, celery, zucchini, etc. in the food processor and add it into the sauce. I use this on pizza and pasta.

I’ve heard other moms throw vegetables in smoothies but I’ve never tried it. Does anyone have any specific recipes for that? How about some other veggie-disguising recipes and tips? I’d love to hear them.
